In December 2024, Japanese traditional knowledge and skills of sake-making was officially inscribed as part of UNESCO’s Intangible Cultural Heritage, celebrating the craftsmanship and heritage behind these time-honored beverages.

“Traditional sake-making” refers to Japan’s ancient techniques of fermenting ingredients like rice and barley using koji mold. This craftsmanship has evolved across the country, deeply intertwined with local climates and natural surroundings, producing iconic beverages such as Japanese sake (nihonshu), shochu, awamori (distilled liquor), and mirin (liqueur for cooking).

 

One of Japan’s most renowned sake regions is Nadagogo, which flourished along the coastal areas of Kobe and Nishinomiya. With a landscape perfectly suited for sake production, it represents a hub of sake excellence. Nadagogo is located in Hyogo Prefecture, the top sake-producing region in Japan, where it accounts for the largest share of production.
